I remember seeing a similar vegan spinach and bean bowl recipe in a cookbook called Isa Does It. Unfortunately I no longer have the book, but luckily as the meal is so tasty, I've made it that many times that it's pretty much stuck in my head!
There are a few differences as I like to add turmeric and mix up the beans so it's not just black beans. Check it out, you won't be disappointed.
This vegan spinach and bean bowl is super delicious and nutritious, although feel free to try different types of beans and you could also replace kale instead of spinach if you fancy a change.
Here's the ingredients (serves 2)
1 tbsp coconut oil (any oil will do)
1 onion sliced
Pinch of salt
3-4 garlic cloves, chopped finely
14 small tomatoes, chopped in half (or a tin if you choose)
1 tablespoon sundried tomato paste
1 tsp cumin
1/4 cup white wine vinegar
1/4 cup of water
200g spinach
1 can black beans, rinsed and drained
1 can haricot beans
1/2 tsp turmeric
2 servings of quinoa (or something similar)
For the Guacamole:
1 Avocado crushed
4 small tomatoes chopped fine
1/2 lime
Pinch of salt
Method
Preheat oil in medium pan.
Saute onions for a 5 mins then add the garlic for 1 min.
Add the tomatoes, tomato paste, cumin and salt.
Add the water and white winer vinegar. Make sure its simmering and add handfuls of spinach at a time.
Add the beans, turmeric and stir well cooking for a few minutes. Add more water if needed, to make a juicy texture but not too watery.
Mix ingredients for the guacamole
Serve with quinoa, bulgur wheat or rice
